Our low yield, organic and biodynamic vine-growing is unique. Cuvelier Los Andes wines are made exclusively from grapes grown within our own vineyard. Our vineyard is very carefully managed. We consider quality and respect for both the environment and the health of our team and of our customer’s top priorities. That is why we employ only organic and biodynamic methods. Our Argentinian team, following a “Bordeaux Grand Cru” vine-growing method, produces high quality grapes with very low yields of 40 to 70 quintals per hectare. Organic material was originally very scarce and made up less than 1% of the soil because of rapid decomposition and mineralization of elements due to the semi-arid conditions of the terrain. But this situation is improving thanks to CLA’s implementation of organic and biodynamic practices in addition to the maintenance of both indigenous and planted groundcover. Until our youngest vines are mature enough to produce grapes with enough complexity to qualify for our top wines, we use these grapes in our Varietals range. With our Cabernet Sauvignon we offer the distinctive flavors and Mendoza’s purest expressions of our emblematic varietal in Bordeaux. We produce this wine using the same process, care and love as per our Colección. Our Cabernet Sauvignon varietal displays deep, ruby-red color. The nose exhibits mature and complex notes of spice red pepper and good minerality. A crisp and fresh cabernet with lovely length and precision giving a stone and natural basil undertone. Nice first mouth, showing soft, intense and varietally precise, with good energy for the flavors of currant, plum, tobacco and earth. Medium body, slightly dusty tannins, a cherry note and solid structure. Complex with a long fine finish. Very nice acidic balance and easy to drink. Aged 60% in French oak barrels for 12 months.
